Friday's Fried Rice

Vegetarian fried rice is a great alternative to meat meals, breaks up the week, improves digestion and simply adds extra vegetables into your meal immediately. Use brown rice for a nuttier flavour, low GI and stay fuller for longer.

Friday's Fried Rice -

2 Cups Brown rice 

2 Large Carrots

1 Onion

2 Cups Frozen Peas
3 Tbs Tamari Sauce

4 Eggs

1Tbs Olive or Coconut oil

Cook rice till soft. Rinse, strain and put aside. 

Finely dice and peel carrots and onion. Pan fry in oil till soft and brown. Fry up eggs and stir through scramble. Add peas and cook for another few minutes then add cooked rice and Tamari. Stir through thoroughly till well combined and cooked through. Serve immediately or store in airtight container for a few days. 

Serves around 5-6. Cook extra for afternoon snacks for the kids and lunches.
